Best Ever Tomato Salad

I can’t remember a night this salad was missing from our family dining table since I was a little girl. Like all Italian food, simple ingredients that work so well together. Because it’s so simple you really need to use the best tomatoes you can get your hands on.

There’s not much to it, ripe tomatoes (I like the baby Roma tomatoes, but any ripe tomato will do), garlic, onion and basil. Season with salt and pepper, a little olive oil and vinegar and that’s it. The best bit? Mopping up the juices at the bottom of the plate with a hunk of bread.

This salad proves simplicity is hard to beat. Use the best tomatoes you can find.

Ingredients Method Notes

Ingredients
  

  • 500 g ripe tomatoes ( I like using mini Roma or cherry, but large ones are just as good)
  • ¼ red onion, peeled and finely diced
  • 1 garlic clove, peeled and finely sliced
  • 1 handful fresh basil leaves, chopped
  • salt
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar

Method
 

  1. If using mini Roma or cherry tomatoes, cut in halves. If using larger tomatoes, cut into bite-size chunks. Place into a bowl.
  2. Add the onion, garlic and basil. Toss gently to combine.
  3. Add the extra-virgin olive oil, red wine vinegar and a good pinch of salt and toss to combine.
  4. Taste and add more salt if needed.
  5. Serve.

Notes

You can eat this straight away, but if you can, dress this salad 30 min before serving to allow the flavours to develop.
This salad pairs perfectly with crusty bread to mop up the juices at the end.
