Method
- If using mini Roma or cherry tomatoes, cut in halves. If using larger tomatoes, cut into bite-size chunks. Place into a bowl.
- Add the onion, garlic and basil. Toss gently to combine.
- Add the extra-virgin olive oil, red wine vinegar and a good pinch of salt and toss to combine.
- Taste and add more salt if needed.
- Serve.
Notes
You can eat this straight away, but if you can, dress this salad 30 min before serving to allow the flavours to develop.
This salad pairs perfectly with crusty bread to mop up the juices at the end.
