Salami Bites with Antipasto

I love bite-size food because it’s a great way to try a little bit of this and a little bit of that without overindulging.

These little salami bites are a cute way to serve something gutsy with Italian flavour, in an elegant presentation. They taste like little pizzas minus the dough.

There are loads of different ways you can fill them, so once you’ve mastered how to make the ‘cups’ you can use your own combination of flavours to make your own unique salami bites.

Salami Bites with Antipasto

Bitesize cups of salami filled with antipasto are great for entertaining.

Servings: 12 cups
Ingredients Method

Ingredients

  • 12 thin slices of salami (such as Hungarian)
  • 150 g marinated artichokes, drained and diced
  • 150 g roasted red capsicum, diced
  • 150 g Bocconcini cheese, halved
  • 150 g cherry tomatoes, halved
  • 1 tsp dried oregano
  • 1 handful fresh basil leaves, chopped

Method

Make the Salami Cups
  1. Preheat oven to 180°C (355°F).
  2. Using a mini muffin tin, place one slice of salami into each hole, shaping to fit and form a ‘cup’. To keep the cups ‘open’ stuff them with scrunched up balls of aluminum foil. This makes them a lot easier to fill once they’re baked.
  3. Bake for 15 minutes or until starting to crisp. The edges will change colour slightly. Cool and remove from tin.
Assembly
  1. Toss all the other ingredients together in a bowl and fill salami cups.

Welcome

Hi. I’m Liliana. Welcome to my little Italian kitchen under the Australian sun. Here you’ll find recipes that come from my Italian roots mixed with the multicultural melting pot of my Aussie home. I love to share stories about food and travel. I’m always dreaming of Italy, have a passion for the ancient world, and when not in the kitchen you will find me in a good book or two.  I believe food connects us to each other and there is nothing better than good simple food placed in the middle of the table for everyone to share. Hoping my recipes bring a little piece of Italy and joy to your table.
