Basic Tomato Sauce

A simple tomato sauce that is the foundation of many recipes or use as a simple dressing over pasta.
Servings: 2 litres

Ingredients
  

  • olive oil
  • 1 brown onion, peeled and finely diced
  • ½ carrot, peeled and finely diced
  • 1 celery stick, finely chopped
  • 3 cloves of garlic, peeled and finely sliced
  • 6 x 400 g tins crushed tomatoes
  • 125 ml water
  • 1 tbsp dried oregano
  • 1 pinch salt
  • 1 small handful fresh basil leaves

Method
 

  1. Splash a little olive oil into a saucepan and saute the onion, celery and carrot over a medium heat for 3 – 5 minutes or until the vegetables are tender.
  2. Add the garlic and cook for another minute.
  3. Add the tomatoes, water, oregano and salt. Stir to combine, increase the heat and bring to the boil. Cover, reduce heat and simmer for 30 minutes.
  4. Add the basil leaves, taste and adjust seasoning if necessary. Cook for 5 minutes more. Transfer everything to a food processor and blitz to make a smooth sauce.
