Easy No Churn Ice-Cream

Ice-cream purists turn away now. The only thing about this recipe that resembles a proper homemade ice cream is how it tastes.

3 ingredients, 5 minutes mixing and it’s in the freezer. This is egg-less too.

Once frozen, it’s creamy and delicious, just like ice cream should be. Anyone can make this; it’s a great one for the kids. The best thing about this recipe is that it forms the basis of so many variations

Use this to form the basis of an endless amount of flavour combinations.

Some of my favourites are salted caramel, olive oil with citrus (very decadent and surprisingly delicious), lemon meringue, cannoli flavour, rum and raisin (pictured), chocolate hazelnut and my personal favourite – pistachio.

Easy No Churn Ice-Cream

A simple way to get home-made ice-cream without the fuss of making a custard or using a churn.

Ingredients Equipment Method Notes

Ingredients
  

  • 600 ml thickened cream (double cream)
  • 400 g sweetened condensed milk
  • 1 tsp vanilla extract

Equipment

  • 1 Electric mixer

Method
 

  1. Tip all the ingredients into the bowl of an electric mixer and beat on high speed until stiff peaks form. Transfer to an airtight container and freeze for 6 hours or overnight. It’s that easy!
  2. You can add whatever you like to turn this into your own creation, here are some of my favourites:
Salted Caramel Ice Cream
  1. Once cream is beaten, dollop spoonfuls from a jar of ready-made salted caramel and stir through. Add a little Maldon Salt.
Citrus and Olive Oil
  1. Add 1⁄3cup good quality extra virgin olive oil with the cream, and the finely grated rind of an orange or lemon, then beat.
Lemon Meringue
  1. Add a jar of lemon curd and some crushed store-bought meringue. Swirl through.
Cannoli
  1. Add glace fruit, chopped chocolate, chopped pistachios and orange zest.
Chocolate Hazelnut
  1. Add some Nutella (hazelnut chocolate spread) and chopped toasted hazelnuts.
Rum and Raisin (Christmas flavour)
  1. Add 1 cup fruit mince and a splash of rum.
Pistachio
  1. Add 1 - 2 cups pistachio spread and chopped pistachios. Swirl together.

Notes

There are an endless amount of possibilities here! Experiment with your own flavour combinations.
