I love bite-size food because it’s a great way to try a little bit of this and a little bit of that without overindulging.
These little salami bites are a cute way to serve something gutsy with Italian flavour, in an elegant presentation. They taste like little pizzas minus the dough.
There are loads of different ways you can fill them, so once you’ve mastered how to make the ‘cups’ you can use your own combination of flavours to make your own unique salami bites.




Salami Bites with Antipasto

Method
- Preheat oven to 180°C (355°F).
- Using a mini muffin tin, place one slice of salami into each hole, shaping to fit and form a ‘cup’. To keep the cups ‘open’ stuff them with scrunched up balls of aluminum foil. This makes them a lot easier to fill once they’re baked.
- Bake for 15 minutes or until starting to crisp. The edges will change colour slightly. Cool and remove from tin.
- Toss all the other ingredients together in a bowl and fill salami cups.
