Orange and Almond Biscuits

Chewy almond biscuits with a hint of orange.

Ingredients
  

  • 200 g almond meal
  • 220 g caster sugar
  • 50 g plain flour
  • 2 egg whites
  • pinch of salt
  • 1 tsp vanilla extract
  • finely grated rind of 1 orange
  • 1 egg white (extra), lightly beaten
  • 50 g flaked almonds
  • icing sugar, for dusting

Method
 

  1. Preheat your oven to 180°C (350°F). Line two oven trays with baking paper.
  2. Place the almond meal, sugar and flour into a bowl and mix to combine.
  3. In a separate bowl, whisk the 2 egg whites with the salt until soft peaks form. Fold into the dry mix with the vanilla and rind and mix to form a dough. It’s easiest to use your hands to squish it into a dough.
  4. Place the flaked almonds into a shallow bowl. Form the dough into oval size biscuits, around 5–6 cm long and 2 cm thick. Brush with the extra beaten egg white and press into the flaked almonds
  5. Cook for 20–25 minutes, or until golden. Cool on a wire rack, then dust with icing sugar to serve
