Wouldn’t you think he’d choose one of the meals I lovingly spend hours, days preparing? Hand made pasta, for example? Dishes that require skill? Meals the average person couldn’t replicate ? No. Of all the meals I have made over the years, it’s this easy dish that he names each and every time.
This recipe is called Olio e Aglio in Italian. It literally translates to ‘oil and garlic’. Pepperoncino means ‘chilli’. It’s one of those recipes that you make when you have nothing in the house to cook, but cant be bothered going to the shops to restock. Every Italian would have these ingredients at hand at all times. A packet of dried spaghetti, chilli, garlic, anchovies, olive oil, lemon, parsley and stale bread. It can be made in a matter of minutes, and I will admit is super delicious. But my best meal?
To test the theory I recently spent two days at the Karratha Business Expo cooking a huge variety of meals during my cooking demonstrations. I made fresh pasta, ravioli by hand, creamy pestos, crab linguine and champagne risotto with prawns, plus this easy dish. At the end of the two days I asked a few of the guys who had tasted every dish which one was their favourite. They said this one . Really? Come on guys!
So I guess simple can be amazing. It proves you don’t need to be able to make emulsions, sauces, confit, foams, use a sous vide machine, or spend hours making meals that look like they belong in a restaurant to make something special. This dish truly is delicious, and its so easy, you can make it at home. My best dish apparently. Get this one right and maybe you should apply for Masterchef!
